Arugula cream with skewers of veal filet

Share some arugula leaves. Chop the rest of arugula and onions and fry in butter. Add the fraische cream and pour 400 ml of boiling water. Cook for 15-20 minutes. Cut into the filet strips and place on wooden skewers, forming "waves". Crush the garlic and mix with Kikkoman soy sauce and spread the skewers with this mixture.

Grill 3-4 minutes on all sides. For the cream, add in the blender, seasoning to taste, soy sauce, pepper, lemon juice and sugar. Fill the glasses, garnish with the prick and serve. Serve with crusty baguette.

For the arugula cream:

200g arugulat
2 shallots
1 tablespoon butter tea
300 ml creme
4 tablespoons soy sauce Kikkoman
freshly ground pepper
lime juice
sugar

For the prick:

200 g of calf filet
1 small clove garlic
3 tablespoons soy sauce Kikkoman
1 tablespoon of vegetable oil Tea
